Vegan Cheese Sauce



As winter swiftly rolls in, cravings for hearty, winter-warming meals settle in. I am loving Lasagne, Pasta & Eggplant rolls hot out of the oven. This cheese sauce is an easy, dairy-free option for all your winter warming dishes.



Cheese Sauce (GF, Dairy-Free, Vegan)

Yield: 2~ Cups

Preparation: 30 minutes


You'll need:


1 c cauliflower (I use frozen)

1/4 - 1/2 c sweet potato (depending on how thick you want your sauce to be)

1/2 c soaked cashews

1/3 c nutritional yeast

1/3 almond milk

2 tsp apple cider vinegar*

Salt and Pepper

* Apple Cider Vinegar will give your cheese sauce a tang and intensify the flavour however it is not for everyone! If you are not a fan, just omit.

Method:

  1. In separate pots, steam or boil your cauliflower and sweet potato.

  2. Drain and add to a blender along with the soaked cashews, nutritional yeast, almond milk, apple cider vinegar, salt and pepper.

  3. Blend on high until a smooth and creamy consistency is achieved.

  4. Check flavors and adjust - you may want to add more nutritional yeast, salt, and pepper or apple cider vinegar to achieve optimum cheesy flavour.

  5. Use in lasagne, eggplant rolls or over roasted cauliflower and broccoli florets.

Keep in an airtight container and use within 3 days.
