Hemp Burger Patties

Cook Time: 30 minutes Serves: 7 medium-sized burger patties
For the patties you'll need:
1 large sweet potato, peeled (about 1 1/2 - 2 cups when chopped)
1 large carrot, trimmed and diced into small cubes
3 spring onion s
talks, trimmed and diced
Handful fresh basil, roughly chopped
1½ tsp garlic powder
¾ cup Naturally Elevated Hemp Hearts
Salt and pepper, to taste
⅓ - ½ cup quinoa flakes
2-3 Tbsp coconut oil
Fillings
Burger Buns
Fresh spinach, lettuce or kale leaves
Tomatoes, sliced
Cheese, vegan if preferred
Onion, caramelised or fresh
Avocado, sliced
Mayo
METHOD
Preheat your oven to 180ºC fan-forced.
Fill a medium-sized pot halfway up with filtered water. Bring to a boil over high heat.
Peel sweet potatoes and cut into cubes. Once water is boiling, place the sweet potato into the water and boil until completely tender, approx. 10-15 minutes.
While the sweet potato is boiling, prepare your veggies and set them aside.
When potatoes are tender, drain off the water and place them into a large mixing bowl.
Mash potatoes until just smooth, with a few small lumps remaining.
Place all diced spring onion, carrot, and basil into the mashed potato. Mix until well combined.
Add garlic powder, hemp seeds, and salt and pepper. Mix well.
Add quinoa flakes, beginning with ⅓ cup. Stir them through until the mixture sticks together and holds it’s shape. Tip: If the patties are still breaking apart when you begin forming them, add a little more of the quinoa flakes (1 tablespoon at a time) until they hold their shape.
ON a lined baking tray, spoon a small handful of the patty mixture and press into a cookie-cutter adding the desired amount of mixture for the size patty you want to create. If you don't have a cookie-cutter, you can form the patties using your hands. Repeat with the remaining mixture.
Place the formed patties in the oven for around 20-30 minutes or until they start turning golden.
Optional a large fry pan, melt 1 tablespoon coconut oil over high heat and fry off each patty for extra crisp-ness.
Slice burger buns and prepare desired fillings.
Serve either with a side of fries or a fresh salad.
